As far as I know, Kenny Burrell is the only guitarist to ever record with John Coltrane (McCoy Tyner recounts that Wes Montgomery played with Coltrane, but, alas, there is no recording). This in itself is enough to guarantee his place in jazz history. Beyond that, Kenny Burrell has recorded with most of the other jazz greats, as well as some of the finest guitar trio albums ever. Some of my favorites are Round Midnight (Fantasy), Live at the Village Vanguard, Guitar Forms (with Gil Evans), Sylvia is her Name with Sylvia Syms, and Elington is Forever (2 volumes, Fantasty).
