Eileen's Coke-Chicken Recipe
Ingredients:
14 Chicken Legs (can be supstitute with chicken thighs, or breasts)
6 Average Size Green Peppers cut into desired size pieces or strips
4 Large Onions cut into desired size pieces
2 12oz. Cans of Coca-Cola® (note, Pepsi® will not work)
6 ozs. of Ketchup
Enough cooking oil to cover bottom pf pan lightly
2 to 3 Cloves of Garlic Diced
Optional: Can of Pineapple Chunks, drained
In a large frying-pan or dutch-oven, heat oil and garlic and brown all chicken. Once chicken is lightly browned, drain off all the grease. Add cut-up peppers and onions to chicken in pan, and pour one can of Coke over contents of the pan. In a mixing cup or bowl, combine the 6 ozs. of Ketchup with 6 ozs. of Coke from the second can. Drink remaining Coke in second can. Pour the Ketchup-Coke mixture over the contents of the pan adding to the Coke already in the pan. At this point the mixture in the pan looks very watery.
Continue to cook the mixture until the chicken is comletely cooked throughout. For a more liquid broth, to serve over rice for example, cook with lid. For more of a barbeque-sauce type consistency of broth, cook without lid allowing for more liquid to boil off. As the mixture cooks to desired consistency, add in optional Pinapple Chunks for approximatley 10 minutes of simmering.
