Pizza Crust Recipe


What could be more satisfying and economical than pizza from your own oven? Even if you are short on time, you can always prepare the crust ahead of time and stock it in the freezer for a quick meal. For added nutrition, replace one cup of the white flour with whole-wheat flour.

Mix water, yeast & sugar in a small glass measuring cup. Let stand 5 to 10 minutes until foamy.

Mix flour and salt in a large bowl. Add yeast mixture and oil. Stir, adding more flour if needed, until dough leaves sides of bowl and forms a ball.

Knead dough on a lightly floured surface for 5 minutes or until smooth and elastic. Roll into a ball.

Put dough ball into oiled bowl and turn dough until coated. Cover with a clean dish towel and let rise in a warm place for 45 minutes or until doubled. (Note: In cool weather I turn my toaster oven on low and place the bowl on top.)

Punch down dough. Form dough to fit into a jelly-roll pan OR divide it and use two 12" pizza pans. Let dough stand 15 minutes. (If you are going to freeze crust, bake dough at this point for about 8-10 minutes but don't let it brown, cool, wrap and freeze.)

Cover dough with pizza sauce, then layer on cheese and other toppings. Bake on lowest oven rack at 450 degrees F for 15 to 20 minutes until browned.
