For picnics and so forth, I cook the chicken ahead of time about 3/4 of the way and then finish it over the coals. This cuts down on the cooking time and mess.
Chicken with BBQ Sauce
BBQ sauce
8 oz can Hunt's tomato sauce
3 T brown sugar
2 T Worcestershire sauce
1 t minced garlic
1 T lemon juice
1 T apple cider vinegar
salt, pepper
Combine all ingredients in a small saucepan and simmer over low heat until volume is reduced and sauce is darker and thicker. Oh... about an hour should do it.
Chicken
Put chicken pieces in baking dish or casserole which has been coated with non-stick spray. Spoon BBQ sauce over each chicken piece, adding some between and underneath the pieces to prevent sticking.
Bake covered at 350 degrees. Turn pieces every 15-20 min or so. Uncover after 30 min or so and continue cooking. Add more BBQ sauce when/if it starts to dry, although some browning of the sauce is desireable.
Chicken is done when it's done. Don't overcook, in fact if you will be cooking it again later, a bit underdone is better.
Cool chicken and refrigerate until ready to use. Re-heat on the grill, brushing with extra sauce as desired.
