I got this delicious recipe years ago when I was in high school from the mother of one of my friends. Serve it over thick, buttered toast.

MUSHROOM STEW

2 lb cubed pork (if you have no ethics you can use veal)
1 can tomatoes
1 can tomato paste
2 green peppers
2 medium onions
2 small cans mushrooms
2 beef boullion cubes
2 stalks of celery
1 sm. bay leaf
salt, pepper, garlic powder

Cut pork into uniform cubes, about 1" square, brown in oleo. Add tomatoes, tomato paste, and bay leaf. Simmer 10 min.

Cut onion, celery, green peppers. Brown celery in oleo until tender, add onion, and brown. Add green pepper and sautee briefly. Add to pork/tomato mixture. Add mushrooms, seasonings, and boullion. Transfer to a small roasting pan and bake uncovered for 30-40 min at 350 deg. Stir about three times during the baking.
