PUMPKIN CAKE

This is an easy rich and moist cake which is always well-received. You could probably cut the oil to 3/4 c without noticing it much.

4 eggs
1 c oil
1 c sugar
1/2 tsp salt
1/2 tsp cinnamon
2 c pumpkin
2 c flour
2 tsp baking powder
2 tsp baking soda
1 cup nuts
1 cup chocolate chips

Mix altogether. Add chocolate chips and nuts. Pour into ungreased tube pan and bake 1 hour at 350 deg.

NOTE: I usually have pretty good luck just mixing all the stuff together at once (making sure the baking powder and soda are not lumpy), as described above. If you consistently find lumps of unmixed flour, etc. in the cake you might try mixing the dry and wet ingredients separately, then combining them.
