Recipe from Glynis

"Sloppy Sams" or vegetarian sloppy joes


1 c. brown or red lentils, well rinsed
3 c. water
4 T. olive oil
1 c. chopped onions
2 c. chopped tomatoes
2 cloves of garlic
3 oz. tomato paste
1.5 c. ketchup
1 t. dried mustard
2 t. chili powder
2 to 3 T. molasses

dash of Worchestershire (this can be omitted if you are a strict vegetarian) salt, pepper to taste cayenne pepper to give it a KICK!

Bring water to a boil. Add lentils; boil over medium heat for 30 minutes, stirring occasionally. While lentils are cooking, heat the oil in a skillet. Saute the onions until translucent over medium high heat. Add the tomatoes and garlicAdd the tomatoes (I take the skins off) and garlic; saute for 5 minutes. Add tomato paste, ketchup and seasonings, simmer the stew for 5 to 10 minutes. When the lentils are tender, add to tomato sauce (adding or draining cooking liquid as needed to obtain the desired consistency). Stir and heat thoroughly. Serve on buns or over rice.
