PANCAKES (Adapted from Jane Zukin's "Dairy Free Cookbook") Heat griddle to 350 degrees or use medium heat with a large pan on the stove 1 cup flour 1 tbsp baking powder 1 tbsp sugar (or 2) 1/2 tsp salt 1 egg (beaten) 1/4 cup honey 3/4 cup water 2 tbsp vegetable oil whisk dry ingredients mix wet ingredients combine and mix till just moist - don't overdo it wait 30 seconds (let the baking soda kick in) grease griddle or pan and use 1/4 cup measuring scoop to make medium to small pancakes cook till bubbles appear, then flip and wait till golden brown Makes about 14-16 pancakes The original recipe uses 1/2 cup orange juice and 1/2 cup water. I subsituted honey/water. I think you could use 1/2 cup apple cider and 1/2 cup water. Sometimes I add blueberries or chocolate chips or chopped apples as a variety.
