Found on the web (rec.food.recipes - posted by Jennifer Stuart) and attributed as: Snook's Bayside Club Strawberry Bread Recipe. Recipe is for 2 loaves. 1. Preheat oven to 350 degrees 2. Grease and flour two 4x8 inch loaf pans 3. Mix following dry ingredients: 3 cups flour 2 cups sugar 3 tsp cinnamon 1 tsp baking soda 1 tsp salt 4. Mix following wet ingredients: 1.5 pounds of fresh strawberries - cleaned & sliced 1.25 cups of vegetable oil 4 eggs 5. Combine and stir (by hand) till moist 6. Pour into loaf pans 7. Bake for 1 to 1.5 hours (wooden toothpick comes clean) 8. After cooling, glaze with confectioners sugar/water mixture ------------ Notes: a) I usually make 1 loaf (just half the ingredients). b) I found the loaf pan leaves a heavy crust and mooshy interior so I usually cook in an 8x8 inch brownie pan (per loaf) for 45 minutes to an hour (it's somewhat forgiving but takes a long cooking time). c) I've kept it refrigerated for a couple of days without any flavor degradation, but it does get soft. d) I usually don't bother with the confectioners sugar glaze although my kids love it when I do.
