VEGAN FUDGE found on the web - attributed to "The Compassionate Cook" by Ingrid Newkirk 6 tbsp dairy-free margerine (Fleishmans Unsalted) 3 + 1/2 cups confectioner's sugar 1/2 cup cocoa powder 2 tsp vanilla extract (original recipe called for one tsp) 1/4 cup soy milk, rice milk, or water grease bottom of 9x9 glass pan with another bit of margarine mix ingredients in double boiler till smooth (this will take some time) pour into glass pan (quicky - it sets fast) chill thoroughly - makes about 16 pieces After experimentation, I use water. Rice Milk and Soy Milk add too much flavor. VARIATION: replace vanilla with peppermint oil and add crushed candy canes to the mix just before taking it from the heat
